Sausage Stroganov

Ingredients


Falukorv (swedish large sausage)
Creme Fraiche
Salt
Pimento
Potatoes (Make sure you use enough. You'd be surprised how much is required to make mashed potatoes)
Butter




Directions




  1. Clean the potatoes and slice into smaller pieces.
  2. Chop the sausage into sticks and pre-fry. Add CF after taste and season with salt and pimento. Let it cook on low temp.
  3. When the potatoes are done, pour all the water out and mash them with an electric whipper. Stir on low speed. Add salt, butter and a little pimento and stir into a thick puree. Lumps are recommended to save.




I should mention that this is a budget version of stroganov when there's a low stock of ingredients. The proper way to cook this is to include diced onions, meatbroth cubes, tomato puree and soy sauce.




Availability of Ingredients


  • If Falukorv is unavailable, the closest that has the same texture (but not exactly the taste, which might be a bit sweeter) is SPAM. Before following the directions above, cut SPAM into desired sizes and fry separetely first so that the meat won't break off easily.
  • Sour cream can be used in place of Creme Fraiche when it comes to texture and density, but tastes a bit different and stronger too. Amount to be added depends on your taste.

Sunflower Meat with Sun Dried Tomatoes

Sundried Tomatoes from Druvan and chopped onions


Served with Penne Pasta

A real experiment in combining flavours and ingredients from different continents.


Ingredients

400g minced meat
sunflower seeds
white pepper
salt
cayenne pepper
1tbsp Creme Fraiche
1can coconut milk
sundried tomatoes
1 onion



Directions
  1. Start with frying the meat and letting it get properly cooked.
  2. Grind the sunflower seeds together with white pepper, salt and just a little cayenne pepper until  it's almost entirely grinded. Preferable is to save some of the seeds just almost entirely crushed.
  3. Pour the mixture in the pan and blend well. Let it fry for just a minute.
  4. Add the coconut milk and creme fraiche. Let it simmer for a few minutes until almost all the fluid has evaporated.
  5. Add chopped sundried tomatoes and onions and stir.
Serve with Penne Pasta or whatever pasta you prefer.

  • Sun-dried tomatoes are available almost in any grocery, especially in Sweden. Our favorite brand is Druvan. If it is unavailable in any location (we haven't really seen one in the Philippines or it's possible we did not look enough), home made sun-dried tomatoes are easy to do. Pea Soup Deluxe with Flat Bread



A little lazy cooking this night because it has been a really busy day. Easy to prepare but a dish that leaves you full for the rest of the night.

Ingredients

Ready-to-heat peasoup in a can / Ärtsoppa med extra fläsk (peasoup with extra pork)
Senap (Mustard)


Directions
  1. Just let it boil easily with half a can of water.
  2. Add a string of mustard, how much is up to yourself of course :)
  3. Served with swedish flatbread with a few slices of gouda-cheese.




Availability of Ingredients
  • Everything can be found in just about any swedish grocerystore. If you can't get a hold of Ärtsoppa, just make your own peasoup with the help of http://southernfood.about.com/od/beansoups/r/blbb35.htm
  • You can use MY San Sky Flakes (in the Philippines) or plain crackers, in place of flat bread.



Tuna Casserole with Tomato Noodles

All mixed together with mayo, creme fraiche, diced apples and salt and black pepper.

Ingredients



2 cans of tuna
½can of black beans
1 apple (red)
2tbsp Creme Fraiche
2tbsp Mayonaisse
salt
black pepper
2 packs of noodles (without flavoring)
½pack of tomato soup mix
Directions
  1. Drain the tuna from most of the water/oil and pour in a medium sized bowl. Make sure to "loosen up" the tuna.
  2. Dice the apples and add it to the tuna.
  3. Add then your CF and mayo, mixing it well together until it's one single color.
  4. Now you may add the black beans, this is so you won't mash them when trying to mix everything properly.  Finally season it with salt and pepper according to your own taste.
This is just one version of the tuna casserole. the main ingredients are of course tuna, cf and mayo. To make it even tastier, try adding either diced pickles or boston cucumber (http://en.wikipedia.org/wiki/Bostongurka)  and little red onion instead of the black beans. Important thing is to make the caserol thick, since eating this on hard bread or with spaghetti for that matter is very tasty.
You might want to add a little cf to the noodlesoup at the end, just to make it extra creamy.
